The Language of Flowers

Herbs and flowers have been used in wedding bouquets as far back as the Middle Ages.  Along with fragrance, the symbolism assigned to the various plants was an important part of the marriage ceremony.  Herbal bouquets, often called "tussie mussies", are little nosegays of aromatic herbs and flowers that were extremely popular in Elizabethan England -- for good reason.  It is thought that the tussie mussies were carried in hand to social events back then by proper ladies, to touch to their noses (thus, the name "nosegay") for a fragrant whiff every once in awhile. This was necessary because the people of those times did not and could not bathe or wash their hair as often as we do today (lacking our modern plumbing) nor did they have such things as deodorant.  And so, to enjoy one another's company, the ladies sniffed their nosegays, and gentlemen carried snuff boxes filled with fragrant herbs to be open and sniffed occasionally.  Also during Victorian times, men and women used symbolism called "The Language of Flowers" to declare their love and devotion.  You might consider using touches of various herbs and special greens in your wedding bouquets to create symbolic memories of your own.  And don't forget, if you use live greens, such as ivy, in your bridal bouquet, you can clip a few pieces after the ceremony and root them in water, planting them later to keep as a living remembrance of your wonderful day.  Here is a list of some flowers and herbs, each with its historical symbolic meaning:
